Spanish Rice
- 4 slices bacon
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 (14 oz.) can tomatoes
- 1 1/4 c. water
- 1/4 lb. uncooked pkg. precooked rice (1 1/4 c.)
- 1/4 c. chili sauce
- 3/4 tsp. salt
- dash of pepper
- 3/4 tsp. brown sugar
- 1/2 tsp. Worcestershire sauce
- 2 oz. shredded cheese (American or Cheddar; 2 c.)
- Cook bacon until crisp.
- Drain.
- Pour off all but 2 tablespoons bacon fat.
- In remaining fat, cook onion and green pepper until tender.
- Add remaining ingredients, except cheese. Pour mixture into baking dish.
- Cover and bake at 350u0b0 until rice is done, about 20 to 25 minutes.
- Crumble bacon; sprinkle each dish with half the bacon, then cheese.
- Return to oven to
- melt cheese.
- Makes 6 to 8 servings.
