Iz's Pulled Pork Burrito
- 2 1/2 cup water
- 1 tbsp olive oil, extra virgin
- 1 cup wild rice
- 1 tbsp olive oil, extra virgin
- 1 medium onion, chopped
- 1 cup pulled pork
- 1 can black beans
- 6 flour tortillas
- 1 cup Iz's Mediterranean Inspired Salad
- 1 cup shredded cheese
- Bring water and olive oil to a boil.
- Add rice.
- Reduce.
- Cover and simmer for 30 minutes until water has been absorbed.
- Put olive oil and onion into a pan and saute until onion is translucent.
- Reserve some onion for later.
- Add pull pork and seasonings.
- Saute until thoroughly heated.
- Heat black beans.
- Now for the assembly.
- Take a flour tortilla and warm it for a few seconds.
- Place rice, pork, black beans on the tortilla.
- Next add some of the reserved onion, the Mediterranean salad, and some cheese.
- Now the hard part.
- Roll that sucker up.
- Now it's eating time.
- Pick a good beer and maybe a taco sauce you enjoy.
