Sally Kubick's Spaetzle Recipe
- 2 c. flour
- 2 Large eggs
- 1/2 c. lowfat milk (to make a med. dough)
- Salt
- 3 quarts. water
- 1/2 teaspoon baking pwdr
- 4 ounce. butter
- Mix the flour with the Large eggs, lowfat milk, salt and baking pwdr.
- Beat till light and bubbly.
- Set aside.
- Bring 3 qts water to a boil with 1 Tbsp.
- salt.
- Drop the dough into the boiling water a teaspoonful at a time.
- When the dumplings rise to the surface, taste one to make sure they're done.
- When they are done, remove them with a slotted spoon and rinse lightly with cool water.
- Heat the butter in the top of a double boiler.
- Add in the liquid removed dumplings and mix well with two forks.
- Keep them hot over warm water and serve separately with stew or possibly paprikash.
