Sally Kubick's Spaetzle Recipe

  1. Mix the flour with the Large eggs, lowfat milk, salt and baking pwdr.
  2. Beat till light and bubbly.
  3. Set aside.
  4. Bring 3 qts water to a boil with 1 Tbsp.
  5. salt.
  6. Drop the dough into the boiling water a teaspoonful at a time.
  7. When the dumplings rise to the surface, taste one to make sure they're done.
  8. When they are done, remove them with a slotted spoon and rinse lightly with cool water.
  9. Heat the butter in the top of a double boiler.
  10. Add in the liquid removed dumplings and mix well with two forks.
  11. Keep them hot over warm water and serve separately with stew or possibly paprikash.
