Meal-In-One Vegetable Soup

  1. In a heavy saucepan over medium heat, heat olive oil.
  2. Add onion, and cook until tender (about 5 minutes).
  3. Add garlic, seasonings, tomatoes, tomato paste, and stock.
  4. Bring to a boil, reduce heat, cover, and simmer for 30 minutes.
  5. Add lentils and chickpeas.
  6. Season with salt and pepper.
  7. Stir well, and continue cooking for 5 minutes.
