Peanut Butter Cup Ice Cream

  1. In a mixing bowl, with an electric mixer at medium speed, beat the peanut butter and sugar together until well blended.
  2. Add the milk, cream, and vanilla.
  3. Mix on low speed until well blended -- Do not beat hard.
  4. Pour the mixture into the ice cream maker and freeze according to directions, for about 20 to 25 minute or until the consisency of soft serve.
  5. Add the chopped peanut butter cups.
  6. Continue mixing for about 5 more min., or until chopped candy is distributed evenly.
  7. This ice cream will be soft and creamy.
  8. If you prefer a firmer ice cream, spoon it into a freezer container, cover, and place in freezer about 3 hours.
  9. For easier scooping, remove from freezer and let stand at room temperature for 10 minute before serving.
