Broccoli-Cheddar Meat Loaf

  1. Finely roll 12 crackers.
  2. Mix cracker crumbs, turkey, onion, 2 tablespoons chili sauce, parsley and egg.
  3. On waxed paper, pat meat mixture into 12 x 8-inch rectangle.
  4. Reserve 2 tablespoons cheese; sprinkle remaining cheese and broccoli onto meat mixture to within 1/2-inch of edge.
  5. Coarsely break remaining 12 crackers.
  6. Sprinkle over broccoli, pressing lightly into meat. Starting at short end, roll up jellyroll fashion, using waxed paper to help roll; seal ends.
  7. Place loaf into 13 x 9 x 2-inch baking dish.
  8. Bake at 350u0b0 for 50 to 55 minutes.
  9. Last 5 minutes of baking, spread remaining 2 tablespoons chili sauce over meat loaf; sprinkle with reserved cheese.
