Broccoli-Cheddar Meat Loaf
- 24 crackers
- 1 1/2 lb. ground turkey
- 1/3 c. chopped onion
- 1/4 c. chili sauce
- 1 Tbsp. chopped parsley
- 1 egg, beaten
- 1 c. shredded reduced fat Cheddar cheese
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained
- Finely roll 12 crackers.
- Mix cracker crumbs, turkey, onion, 2 tablespoons chili sauce, parsley and egg.
- On waxed paper, pat meat mixture into 12 x 8-inch rectangle.
- Reserve 2 tablespoons cheese; sprinkle remaining cheese and broccoli onto meat mixture to within 1/2-inch of edge.
- Coarsely break remaining 12 crackers.
- Sprinkle over broccoli, pressing lightly into meat. Starting at short end, roll up jellyroll fashion, using waxed paper to help roll; seal ends.
- Place loaf into 13 x 9 x 2-inch baking dish.
- Bake at 350u0b0 for 50 to 55 minutes.
- Last 5 minutes of baking, spread remaining 2 tablespoons chili sauce over meat loaf; sprinkle with reserved cheese.
