Spinach Pear Salad with Mustard Vinaigrette
- 2 each pears cored and thinly sliced
- 6 ounces spinach baby
- 3 tablespoons water
- 2 tablespoons balsamic vinegar
- 1 teaspoon sugar
- 5 teaspoons olive oil extra-virgin
- 1 1/2 teaspoons prepared mustard grainy sone-ground
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper freshly ground coarse
- 1/4 cup parmesan, parmigiano-reggiano cheese, grated shaved
- Combine pear slices and spinach in a large bowl.
- Whisk all remaining ingredients except the cheese in a small bowl.
- Drizzle the vinaigrette over the salad and toss gently to coat.
- Sprinkle with the cheese.
