Baked Egg On Toast Recipe
- 1 slc whole-wheat toast (or possibly a thin slice of toasted bagel)
- 1/2 tsp unsalted butter
- 1 Tbsp. low-fat cottage cheese
- 1 lrg egg
- 1 Tbsp. nonfat or possibly low-fat buttermilk, or possibly half-and-half, or possibly cream Salt to taste Freshly-grnd black pepper to taste
- Heat the oven to 325 degrees.
- If using toast, cut a hole in the center about the size of an egg yolk.
- Butter the bread slice and spread it with cottage cheese.
- Place it in a small baking dish.
- Break the egg over the hole in the bread slice.
- Spoon the buttermilk over the egg.
- Bake till the white is set and the yolk hard but not solid, about 8 min.
- Season with salt and pepper.
- This recipe yields 1 serving.
