Potato Salmon Hash

  1. Mix all ingredients except oil in a
  2. bowl until blended.
  3. Let mixture stand 10 minutes.
  4. Heat oil in a 10-inch skillet over medium heat.
  5. Add potato mixture, spreading with a spatula to cover bottom of pan.
  6. Cook 5 to 6 minutes, pressing down occasionally until bottom is browned and crisp.
  7. Turn hash in clumps and press back into a round.
  8. Cook 5 to 6 minutes longer until bottom is brown and crisp.
  9. Loosen with spatula. Invert onto serving plate and cut in wedges.
  10. Makes 2 servings.
