Turkey Or Chicken Croquettes
- 1 lb. celery, chopped fine
- 1 lb. onions, chopped fine
- 1 1/2 lb. butter, melted
- 2 qt. hot milk
- 8 lb. turkey meat, cooked and chopped fine
- 1 c. parsley, chopped
- salt and pepper to taste
- Saute celery and onions in butter.
- Add flour to make roux; cook 8 to 10 minutes.
- Add hot milk; stir until thick and smooth. Add turkey and parsley; mix thoroughly.
- Season with salt and pepper.
- Put mixture in greased baking pan; cover top with sheet of waxed paper.
- Bake at 350u0b0 for 45 minutes.
- Remove from oven; cool.
- Portion each croquette with ice cream scoop.
- Shape into cones of uniform size and shape.
- Bread croquettes, using standard procedure.
- Deep fry until golden brown.
- May serve with Cream Sauce or Supreme Sauce.
- May garnish with chopped parsley.
