Zucchini Apple Pie

  1. Peel zucchini; remove seeds and slice like apples, 1/2-inch slices.
  2. Cook with 1 cup water until just tender and turning translucent.
  3. Drain and place in cold water for 5 minutes.
  4. Drain again thoroughly.
  5. Add sugar and spices and flour for thickening. Place in bottom crust; dot with butter or margarine.
  6. Top with top crust, seal and flute.
  7. Bake at 400u0b0 for 40 to 50 minutes until golden brown.
  8. This is a real mock "apple" pie and very good.
