Zucchini Apple Pie
- 6 c. sliced overgrown zucchini
- 1 1/2 c. sugar
- 3 Tbsp. flour (or more, if needed)
- 1 1/2 tsp. cinnamon
- a little cloves and allspice (if desired)
- 1/4 tsp. nutmeg
- 1 1/2 tsp. cream of tartar
- 2 Tbsp. lemon juice
- dash of salt
- 1 c. water
- 9-inch double crust
- Peel zucchini; remove seeds and slice like apples, 1/2-inch slices.
- Cook with 1 cup water until just tender and turning translucent.
- Drain and place in cold water for 5 minutes.
- Drain again thoroughly.
- Add sugar and spices and flour for thickening. Place in bottom crust; dot with butter or margarine.
- Top with top crust, seal and flute.
- Bake at 400u0b0 for 40 to 50 minutes until golden brown.
- This is a real mock "apple" pie and very good.
