Broccoli & Cheese Rice Cups

  1. Preheat oven to 350 A.
  2. Spray a muffin pan with nonstick cooking spray.
  3. Set aside.
  4. Mix all ingredients reserving 1/4 cup of cheddar cheese.
  5. Fill muffin tin with rice mixture and sprinkle the tops with remaining cheese.
  6. Bake for 20 minutes.
  7. Cool & enjoy.
  8. Can be served alone or as a side to any meal.
