Broccoli & Cheese Rice Cups
- 1 cup cooked rice
- 1 cup broccoli, chopped
- 3/4 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 4 egg whites, slightly beaten
- 1/2 tsp salt & pepper
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp parsley flakes
- Preheat oven to 350 A.
- Spray a muffin pan with nonstick cooking spray.
- Set aside.
- Mix all ingredients reserving 1/4 cup of cheddar cheese.
- Fill muffin tin with rice mixture and sprinkle the tops with remaining cheese.
- Bake for 20 minutes.
- Cool & enjoy.
- Can be served alone or as a side to any meal.
