Tra-La Coffee Cakes
- 10 each figs, dried stewed, drained
- 2 large eggs
- 1/2 cup sugar
- 1/2 cup milk
- 3 tablespoons vegetable shortening melted
- 1 1/2 cups flour, all-purpose
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup brown sugar
- 1 tablespoon flour, all-purpose
- 1 teaspoon cinnamon
- 3 tablespoons butter or margarine, melted
- 1 x walnuts chopped
- Snip stems from figs, cut them into small bits.
- Combine figs, eggs, sugar, milk, shortening.
- Beat together until well mixed.
- Sift flour, measure and sift again with salt and baking powder.
- Add to first mixture, stir until just mixed.
- Place paper baking cups into muffin tins.
- Spoon batter into cups, filling them half full.
- Sprinkle with topping.
- Bake in moderately hot oven at 375F (190C).
- for about 15 minutes or until light brown and firm to touch.
