Good Morning Pumpkin Pancakes Recipe
- 2 c. flour
- 3 teaspoon baking pwdr
- 2 tbsp. light brown sugar
- 2 teaspoon grnd cinnamon
- 1 teaspoon vanilla extract
- 1 1/2 c. (12 ounce. can) evaporated lowfat milk
- 1/2 c. Libby's solid pack pumpkin
- 2 tbsp. vegetable oil
- 2 Large eggs
- 1 teaspoon grnd allspice
- In a large mixing bowl, combine flour, baking pwdr, sugar, cinnamon, and allspice.
- Add in lowfat milk, pumpkin, oil, Large eggs, and vanilla; beat till smooth.
- Pour 1/4 to 1/2 c. of batter (depending on the size of pancake desired) onto heated and lightly greased griddle.
- Cook till top surface is bubbly and edges are dry.
- Turn.
- Cook till golden brown.
- Keep pancakes hot.
- Serve with favorite syrup.
- Great for Thanksgiving or possibly Christmas breakfast!
