Tequila Lime Grilled Shrimp Tacos with Tequila Lime Chipotle Yogurt Sauce

  1. For the shrimp, in a bowl add tequila, lime juice, garlic, black pepper, red pepper chili flakes and parsley.
  2. Mix until combined.
  3. In a plastic bag or bowl, add the shrimp and the marinade.
  4. Place in the fridge for at least 1 hour or up to 24 hours.
  5. Drain marinade and place the shrimp on skewers and place on a hot grill.
  6. Cook for about 2-3 minutes per side.
  7. Watch the shrimp; when they turn pink, theyre done!
  8. To assemble tacos, on a flour tortilla, add lettuce, shrimp, tomatoes and a 1 tablespoon tequila lime yogurt dressing.
  9. To make the dressing, in a small bowl, combine the Greek yogurt, tequila, lime juice, garlic powder, chili powder, juice from chipotle chilies in adobo sauce, and cilantro, if using.
