Hearty Potato Casserole

  1. Peel potatoes; cut crosswise into 1/4-inch slices. Arrange potato slices in a lightly greased 3-quart shallow baking dish. Combine 1/4 cup plus 2 tablespoons melted butter, paprika and 1/4 teaspoon pepper in a small bowl; stir well. Drizzle butter mixture over potato slices. Cover and bake at 425u0b0 for 30 minutes. Remove cover; bake an additional 15 minutes or until tender.
