Hearty Potato Casserole
- 8 medium-size baking potatoes
- 1/4 c. plus 2 Tbsp. butter or margarine, melted
- 1/4 tsp. paprika
- 1/4 tsp. pepper
- 2 Tbsp. butter or margarine
- 2 Tbsp. all-purpose flour
- 1 1/2 c. milk
- 1 (8 oz.) carton sour cream
- 1 c. shredded Gouda cheese
- 1/4 tsp. pepper
- 1/2 c. cooked bacon, crumbled
- 1/2 c. chopped green onions
- Peel potatoes; cut crosswise into 1/4-inch slices. Arrange potato slices in a lightly greased 3-quart shallow baking dish. Combine 1/4 cup plus 2 tablespoons melted butter, paprika and 1/4 teaspoon pepper in a small bowl; stir well. Drizzle butter mixture over potato slices. Cover and bake at 425u0b0 for 30 minutes. Remove cover; bake an additional 15 minutes or until tender.
