Chocolate Pretzel Cookies
- 1 cup salted butter
- 34 cup brown sugar, firmly packed
- 12 cup sugar
- 1 egg
- 1 teaspoon pure vanilla extract
- 1 12 cups all-purpose flour
- 1 cup medium dessicated unsweetened coconut
- 12 cup large flake oats (not instant or quick)
- 1 teaspoon baking soda
- 1 pinch salt
- 1 cup pretzel, broken into large pieces (Classic Mini Twists)
- 12 cup semi-sweet chocolate chips, and chunks
- 12 cup puffed rice cereal
- Preheat oven to 375F Using a hand mixer on medium speed, or a whisk, cream together butter and sugars until light and fluffy, then add the egg and vanilla.
- Mix until just combined.
- In a large bowl, combine flour, coconut, oats, baking soda, salt.
- Add the flour mixture to the butter mixture, stirring with a wooden spoon until combined.
- Blend in pretzels, chocolate and cereal until just combined.
- Drop about 30 spoonfuls of cookie dough, roughly 2-inches apart, onto parchement paper-lined baking sheets,.
- Bake in center of oven 8-minutes for chewy , 10 minutes for crisp ones.
- Cool on wire racks.
