Diabetic Fruit Cookies Recipe
- 1 c. flour
- 1 teaspoon baking soda
- 1 c. water
- 1 c. dates, minced
- 1/2 c. apples, peeled & minced
- 3/4 c. raisins
- 1/2 c. butter
- 1 c. quick oats
- 2 Large eggs, beaten (I use egg beaters)
- 1 teaspoon vanilla
- 1 c. pecans, minced
- Sift flour and soda, set aside.
- Cook water, dates, apple and raisins; bring to a boil.
- Simmer 3 min.
- Remove from heat and add in the butter and stir.
- Cold mix and then add in Large eggs, oatmeal and the dry ingredients; add in the vanilla and nuts.
- Cover and chill overnight.
- Drop on cookie sheets 2 inches apart.
- Bake in 350 degree oven for about 24 min.
- Store in the refrigerator in air tight container.
- May also add in 1 tsp.
- cinnamon to dry ingredients if you like.
