Spicy Pork Chili
- 1 lb. ground pork
- 2 large onions, chopped
- 4 garlic cloves, minced
- 1 medium sweet red pepper, chopped
- 1 medium green pepper, chopped
- 1 c. chopped celery
- 2 cans (14 1/2 oz. each) diced tomatoes with liquid
- 1 (16 oz.) can kidney beans, rinsed and drained
- 1 (6 oz.) can tomato paste
- 3/4 c. water
- 2 tsp. brown sugar
- 1 tsp. dried oregano
- 1 tsp. chili powder
- 1/4 tsp. dried red pepper flakes
- 1/4 tsp. cayenne pepper
- dash of hot pepper sauce
- In a Dutch oven, brown pork and onions until pork is no longer pink; drain.
- Stir in the garlic, peppers and celery; cook for 5 minutes.
- Add remaining ingredients; bring to a boil.
- Reduce heat; cover and simmer for 45 minutes.
- Yields 6 to 8 servings (2 1/2 quarts).
