Hot Tamales
- 2 lb. ground beef
- 2 onions, diced
- salt
- chili powder
- 4 c. cornmeal
- hot water
- lard
- 1/2 clove garlic, chopped
- red pepper
- 1 can tomato paste
- 6 Tbsp. fat
- 4 to 5 doz. shucks
- Cook beef in small amount of lard for 10 to 15 minutes; add onions and garlic continuing to cook.
- Season to taste with salt, red pepper and chili powder; add tomato paste.
- Cook until all ingredients are done.
- Let meat set for a few minutes; remove fat from top.
- Make a mush by pouring boiling water over cornmeal; season to taste.
- Spread mush over shucks.
- Place thick line of meat in center of mush and roll up.
- Place in large cooker or Dutch oven.
- Pour in 3 cups boiling water.
- Cover and cook slowly for 3 hours.
