Hot Tamales

  1. Cook beef in small amount of lard for 10 to 15 minutes; add onions and garlic continuing to cook.
  2. Season to taste with salt, red pepper and chili powder; add tomato paste.
  3. Cook until all ingredients are done.
  4. Let meat set for a few minutes; remove fat from top.
  5. Make a mush by pouring boiling water over cornmeal; season to taste.
  6. Spread mush over shucks.
  7. Place thick line of meat in center of mush and roll up.
  8. Place in large cooker or Dutch oven.
  9. Pour in 3 cups boiling water.
  10. Cover and cook slowly for 3 hours.
