Marinated Veggie Salad
- 23 cup frozen french-style green beans, thawed
- 12 cup frozen petite peas, thawed
- 13 cup chopped celery
- 14 cup chopped green pepper
- 14 cup chopped red onion
- 1 (2 ounce) jardiced pimientos, drained (I used roasted red peppers)
- 2 tablespoons sugar
- 1 tablespoon canola oil
- 1 tablespoon cider vinegar
- 1 teaspoon water
- 1 small garlic, cloved minced
- herbs, that you like (I love basil and oregano so I generally add a few)
- In a salad bowl, combine the beans, peas, celery, green pepper, onions and roasted red peppers.
- In a small bowl, combine the dressing ingredients.
- Pour over vegetables.
- Cover and refrigerate for at least 2 hours.
- Serve with a slotted spoon.
