Tomato, Avocado and Cilantro Salad With Southwestern Ranch
- 4 large red ripe tomatoes (8 slices)
- 2 large avocados (8 slices)
- 1 purple onion (8 slices)
- 1 bunch cilantro (15 sprigs)
- 2 limes (juiced)
- 12 cup ranch dressing
- 1 teaspoon taco seasoning
- 1 teaspoon hot sauce (depending on taste)
- Start by making the dressing:
- In a small bowl add half of the lime juice, ranch dressing, taco seasoning and hot sauce.
- Mix well.
- Chill in refrigerator while you make the salad.
- (add a few drops of water if the dressing seems to thick).
- Do not add the hot sauce if you do not like things spicy.
- To prepare salad:
- Slice tomatoes, avocado and onion.
- Add juice of half of the lime juice to the avocado to stop browning.
- Remove the cilantro from the stems.
- Alternate the tomato, avocado and onion across a long serving plate.
- Add the cilantro between each layer.
- Take the salad dressing and drizzle over the top of the salad.
- Garnish with more cilantro.
- Enjoy!
