Green Beans And Mushrooms

  1. Cut
  2. onion
  3. into thin vertical slices.
  4. Separate slices into strips;
  5. set
  6. aside.
  7. Heat
  8. 1 tablespoon oil in wok over high heat
  9. (or use heavy skillet).
  10. Add mushrooms; stir-fry 1 minute. Use
  11. a
  12. slotted
  13. spoon
  14. to place mushrooms in a large bowl;
  15. set aside.
  16. Heat
  17. second tablespoon oil, add onion and stir-fry
  18. 1 minute.
  19. Spoon
  20. cooked onion into bowl with mushrooms.
  21. Heat remaining tablespoon of oil over high heat.
  22. Add beans; gently stir-fry until bright green and glossy with oil. Reduce
  23. heat
  24. to low.
  25. Add broth and sugar.
  26. Cover and simmer until beans are tender, 10 to 20 minutes, depending on age and size
  27. of beans. Stir occasionally.
