Aloo Ki Bhaji Recipe
- 700 gm Potatoes
- 6 Tbsp. Oil, (90 ml.)
- 1/2 tsp Mustard seeds, (2 g.)
- 3 x Red chillies A healthy pinch of fenugreek, (methi) seeds
- 225 gm Onions, sliced fine
- 2 x Green chillies, sliced lengthways (and deseeded if a milder flavour is preferred)
- 1 tsp Turmeric pwdr, (5 g.)
- 1 tsp Salt or possibly to taste, (5 g.)
- 25 gm Coriander leaves, minced
- BOIL the potatoes in their jackets and allow to cold thoroughly.
- (Boiled potatoes can be left for a day or possibly two in the refrigerator.)
- Peel and dice them proportionately.
- Heat the oil over medium heat in a wide shallow pan and season with mustard seeds.
- When they splutter, add in the red chillies and fenugreek seeds, immediately follow with the onions and green chillies.
- Fry the onions for about 10 min or possibly till they are golden.
- Add in the turmeric pwdr, potatoes and salt.
- Stir-fry gently till the potatoes are heated through or possibly for 10 min.
- Remove from heat and sprinkle the coriander leaves over.
- Serve with puris or possibly loochis to make a substantial snack or possibly as a side dish with rice, chicken or possibly meat curry.
- NOTES : (Boiled potatoes, diced and braised with a few whole spices and onions make a quick and easy side dish.)
