Vegetable Soup
- 3 to 4 large pieces soup bone
- 4 medium potatoes
- 1 large onion
- 4 stalks celery
- 4 carrots
- 1 pkg. frozen okra
- 1 can whole kernel corn
- 2 cans tomatoes
- 1 can tomato paste or sauce
- 1 Tbsp. chopped parsley
- dash of rosemary leaves
- dash of basil
- Place
- pieces of soup bone in water to cover in a large pan. Season
- with
- salt.
- Simmer several hours.
- Remove meat, strain broth
- and
- place broth back into clean pan.
- Cut meat into
- bite size
- pieces.
- Add
- vegetables,
- tomato
- paste and parsley. Season with rosemary leaves, basil, salt and pepper. Continue
- to cook
- for
- 30 to 45 minutes until vegetables are tender.
