Breakfast Bread Pudding With Warm Berry Sauce Recipe
- 2 x Large eggs
- 3/4 c. sugar
- 3 c. lowfat milk
- 1 c. cream
- 1/2 c. butter melted
- 1 Tbsp. vanilla
- 3/4 c. raisins
- 1 tsp allspice
- 8 slc white bread
- 2 c. red raspberries
- 2 c. strawberries
- 1/3 c. sugar
- 1/2 c. orange juice
- 3 Tbsp. lemon juice
- Combine Large eggs, 3/4 c. sugar, lowfat milk, cream, melted butter, vanilla, raisins, and allspice in a bowl.
- Place slices of white bread in a shallow bowl and pour the egg mix on top; let stand about 20 min.
- Preheat the oven to 350 degrees.
- Arrange the bread slices in a greased baking dish and bake uncovered till set and the top is lightly browned, about 45 min.
- Meanwhile, in a saucepan, combine red raspberries, strawberries, 1/2 c. sugar, orange juice, and lemon juice.
- Cook, stirring constantly, till soft, about 5 min.
- Process in a food processor till smooth.
- Heat till hot and serve over bread pudding.
- This recipe yields 8 servings.
