Spaghetti Squash Italiano

  1. Pierce squash several times with tip of sharp knife or fork to allow steam to escape.
  2. Place squash in shallow microwaveable dish.
  3. Microwave on HIGH 10 to 15 min.
  4. or just until squash is softened, turning every 5 min.
  5. Set aside.
  6. Heat oven to 475 degrees F. Crumble sausage into large nonstick skillet; cook on medium-high heat 2 min.
  7. or until evenly browned, stirring frequently.
  8. Stir in onions; cook and stir 5 min.
  9. Add peppers and garlic; cook 5 min., stirring occasionally.
  10. Cut squash in half; remove and discard seeds.
  11. Scoop out squash strands.
  12. Add to sausage mixture; mix lightly.
  13. Stir in pasta sauce.
  14. Spoon into 2-qt.
  15. casserole sprayed with cooking spray; cover.
  16. Bake 20 to 25 min.
  17. or until heated through.
  18. Meanwhile, combine cheese and parsley.
  19. Sprinkle cheese mixture over squash.
  20. Bake, uncovered, 5 min.
  21. or until cheese is melted.
