Flounder with Sweet and Sour Cabbage
- 3 tbsp. all-purpose flour
- 1/2 tsp. salt
- 4 small flounder fillets
- 2 tbsp. salad oil
- 1 jar sweet and sour red cabbage
- 1/2 medium cucumber
- In large plastic bag, mix flour and salt.
- Add flounder fillets and shake to coat with flour mixture.
- In nonstick 12-inch skillet over medium-high heat, in 1 tablespoon hot salad oil, cook 2 flounder fillets 6 minutes or until fish flakes easily when tested with a fork, turning fillets once with pancake turner.
- Remove fillets to platter.
- Repeat with remaining fillets.
- Meanwhile, in small saucepan, heat sweet and sour cabbage.
- To serve, with slotted spoon, spoon half of cabbage over fillets; top with diced cucumber.
- Serve with remaining cabbage.
