Flounder with Sweet and Sour Cabbage

  1. In large plastic bag, mix flour and salt.
  2. Add flounder fillets and shake to coat with flour mixture.
  3. In nonstick 12-inch skillet over medium-high heat, in 1 tablespoon hot salad oil, cook 2 flounder fillets 6 minutes or until fish flakes easily when tested with a fork, turning fillets once with pancake turner.
  4. Remove fillets to platter.
  5. Repeat with remaining fillets.
  6. Meanwhile, in small saucepan, heat sweet and sour cabbage.
  7. To serve, with slotted spoon, spoon half of cabbage over fillets; top with diced cucumber.
  8. Serve with remaining cabbage.
