Marinated Coleslaw
- 1 large head of cabbage, shredded
- 1 onion, chopped fine
- 1 large green bell pepper, cored, seeded, and chopped fine
- 1 celery stalk, chopped fine
- 1 1/2 cups sugar
- 1 cup cider vinegar
- 3/4 cup vegetable oil
- 1 tablespoon salt
- Combine the cabbage, onion, bell pepper, celery, and sugar in a large mixing bowl.
- Mix well and set aside.
- Combine the vinegar, oil, and salt in a saucepan and bring to a boil.
- Pour the dressing over the cabbage mixture and stir well.
- Cover and refrigerate until chilled.
