Grilled Balsamic Vegetables
- 4 garlic cloves, minced
- 1 cup balsamic vinegar
- 1 lb asparagus
- 2 yellow squash, sliced 1/2 inch thick
- 2 zucchini, sliced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons chopped fresh oregano
- kosher salt
- fresh ground pepper
- Heat grill or grill pan to 350 degrees.
- In small saucepan combine garlic and balsamic vinegar.
- Cook over medium heat for 10 minutes or until syrupy.
- Set aside and keep warm.
- In a large bowl toss asparagus, squash, and zucchini with olive oil.
- Season with oregano, salt and pepper to taste.
- Toss to coat.
- Grill vegetables 2-3 minutes per side.
- Or until cooked through.
- Transfer vegetables to a platter, drizzle with balsamic dressing and serve immediately.
