Lime Cubes

• 1 ounce fresh lime juice
• 1 ounce cold water
• 1/2 ounce Simple Syrup
• 1 kaffir lime leaf (optional)
• 3 cardamom pods
• One 2-inch strip of lime zest
• Ice
• 2 ounces chilled ginger beer

1. In a cocktail shaker, combine all of the ingredients except ice and the ginger beer and muddle.
2. Strain into an ice-filled highball glass and stir in the ginger beer.
