Spring Rolls with Orange and Red Bell Pepper Salsa

  1. Combine first 8 ingredients in bowl.
  2. (Can be made 2 hours ahead.
  3. Chill.)
  4. Prepare spring rolls according to package instructions.
  5. Set radiccio leaves in center of platter.
  6. Fill with salsa.
  7. Cut spring rolls in half and place on platter.
  8. Serve, allowing diners to spoon salsa into cut end of spring rolls.
