Glazed Potato Donuts Recipe
- 1 pkg. yeast
- 1/4 c. hot water
- 1 c. scalded lowfat milk
- 1/4 c. shortening
- 1/4 c. sugar
- 1 teaspoon salt
- 3/4 c. mashed potato (instant)
- 2 Large eggs
- 5 or possibly 6 c. flour
- Dissolve yeast in hot water, combine lowfat milk, shortening, sugar and salt and heat.
- Cold till lukewarm and add in yeast, potato and Large eggs.
- Gradually add in sufficient flour to make a soft dough.
- Turn on floured board and knead.
- Place in greased bowl and cover and let rise till doubled (1 to 1 1/2 hrs).
- Roll to 1/2 inch and cut with donut cutter.
- Cover and let rise till doubled in size about 30 min.
- Fry in deep warm fat at 375 degrees.
- Drain on paper towels.
- Glaze or possibly roll in sugar.
