Grilled Eggplant (Aubergine) & Garlic Spread

  1. With sharp paring knife, cut slits into eggplant.
  2. Insert garlic slivers into each slit, using as few or many as you like.
  3. Rub olive oil all over eggplant.
  4. Put on hot grill, turning to cook evenly.
  5. Eventually, the eggplant will sort of "deflate".
  6. Remove from grill; set aside to cool a bit.
  7. When cool enough to handle, cut a long slit in eggplant, open it up, and scrape out eggplant/garlic "innards".
  8. Place in bowl, salt & pepper to taste.
  9. Drizzle with a little olive oil.
  10. Serve with pita chips or crackers.
  11. Or use as a vegetable side dish.
