Beet Cake Recipe
- 3 c. all purpose flour
- 2 c. white sugar
- 5 Tbsp. cocoa
- 2 tsp baking soda
- 1 tsp salt
- 1 c. oil
- 2 c. pureed cooked red beets
- 2 x Large eggs
- 1 tsp vanilla
- Stir dry ingredients together.
- Mix oil and beets together and add in to dry ingredients.
- Add in Large eggs and vanilla and mix well.
- Pour into a greased and floured 9 x 13 inch pan and bake at 325 degrees till toothpick in center comes out clean, about 30-35 min.
- Frost with a simple butter cream or possibly cream cheese frosting.
