Mini Turkey Meatloaves
- 1/2 whole Sweet Onion, Diced
- 1 Tablespoon Olive Oil
- 1 pound Ground Turkey Breast
- 2 cups Fresh Spinach Leaves, Rough Chop
- 1- 1/2 Tablespoon Worcestershire Sauce
- 2 Tablespoons Dijon Mustard
- 2 teaspoons Coarse Salt
- 2 teaspoons Freshly Ground Black Pepper
- 1/2 cups Panko Bread Crumbs
- 1/4 cups Grated Parmesan Cheese
- 1 cup Shredded Parmesan Cheese
- 1 whole Egg White
- 2 cups Favorite Marinara
- Preheat oven to 375 degrees (F).
- In small skillet, saute the diced onions in one tablespoon of olive oil, season with salt and pepper, until tender.
- Let cool.
- In a large bowl, add turkey, chopped spinach leaves, worcestershire sauce, dijon mustard, salt and pepper, bread crumbs, cheeses, egg white, and cooled onions.
- Gentle knead mixture with your hands, careful not to over mix, but until combined.
- On a foil lined baking sheet, form 4 miniature loaves.
- Pour about 1/2 cup of marinara over the top of each meatloaf.
- Bake in the oven for 30 40 minutes.
