Salmon & Rice, with Fruit in a Cloud

  1. Spread COOL WHIP FREE evenly onto bottoms and up sides of 4 bowls.
  2. Refrigerate until ready to serve dessert, then spoon fruit evenly into centers of COOL WHIP FREE.
  3. Place salmon on broiler pan sprayed with cooking spray; rub olive oil into salmon and season as desired with favorite salt-free seasoning.
  4. Broil 3-4 min.
  5. per side, or until cooked through.
  6. Cook rice as directed on package.
  7. Steam pea pods and carrots; toss with margarine; serve with cooked salmon and rice.
  8. Divide into 4 equal servings.
  9. Serve each person an 8 fl oz glass of water with meal.
