Creamy Rice & Broccoli Soup
- 2 carrots, chopped Target 2 lb For $3.00 thru 02/06
- 2 stalks celery, chopped
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 3 Tbsp. corn oil
- 3 cups water
- 1 cube chicken bouillon
- 1/2 tsp. black pepper
- 4 cups small fresh broccoli florets
- 1/2 cup long-grain white rice, uncooked
- 1-3/4 cups milk
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1/4 cup KRAFT Grated Parmesan Cheese
- Cook and stir carrots, celery and onions in hot oil in large saucepan on medium-high heat 5 min.
- Add water, bouillon and pepper; stir.
- Bring to boil.
- Stir in broccoli and rice; simmer on medium-low heat 15 to 20 min.
- or until vegetables are tender, stirring frequently.
- Add soup, in batches, to blender or food processor; blend until smooth.
- Return to saucepan.
- Stir in milk, sour cream and cheese; cook 3 to 5 min.
- or until heated through, stirring occasionally.
