Fried Eggplant

  1. Lightly beat the egg and place in a shallow bowl.
  2. Dip the eggplant slices in egg and lightly dust with flour.
  3. Fry the coated slices in the vegetable oil until lightly brown -- turning once.
  4. Place the eggplant on paper towel to draw out excess oil.
  5. Add salt and pepper to taste.
