Broiled Shrimp With Tarragon Recipe
- 1 lrg sweet onion peeled, minced
- 4 x cloves garlic peeled, chopped
- 1/3 c. fresh tarragon finely minced
- 1/4 tsp salt
- 2 doz shrimp peeled, deveined
- 1 Tbsp. extra virgin olive oil Juice from 1 lemon
- Place minced onion into a heavy skillet.
- Add in a small amount of water and cook the onion till translucent/soft.
- Add in the garlic, tarragon and salt.
- Mix well.
- Cover the skillet and remove it from heat.
- Skewer the shrimp and brush with oil.
- Place on broiler rack or possibly grill over high heat, turning once till shrimp are pink.
- Add in to onion mix and stir.
- Top with juice from lemon.
- Serve in a decorative bowl.
- This recipe yields 4 servings.
