Mexican Casserole
- 12 ounces vegetarian ground beef (I use Morning Star Farms "Meal Starters")
- 2 cups cooked brown rice
- 2 cups mixed vegetables (defrosted)
- 1 (1 1/2 ounce) packet burrito seasoning mix
- 16 ounces salsa
- 1 (10 ounce) canlight cream soup (anything)
- 1 cup light shredded cheddar cheese
- Heat the oven to 350.
- 1.
- Mix all of the ingredients together (except the cheese)

- Pour into a sprayed casserole dish.
- 3.
- If the dish looks a bit too dry for you add a bit of broth or some more salsa.
- 4.
- Cover with the cheese.
- 5.
- Cover the dish and cook for about 40 minutes then uncover it and cook it for another 15 minutes or so.
- I serve this topped with lettuce, light sour cream, hot sauce and salsa (like a salad on top of the casserole).
