Luau Ribs

  1. Preheat oven to 275 degrees.
  2. In small bowl, combine brown sugar, cinnamon, cloves, ginger and red pepper to make a rub.
  3. Score membrane of ribs; cut each full rack of ribs into half racks.
  4. Rub in the spice mix on both sides of each rib rack, dividing it evenly between each rack.
  5. Lay 2 orange slices and 2 pineapple slices on the meaty side of each rib section, and wrap tightly in foil.
  6. Wrap in a second layer of foil.
  7. Place on a cookie sheet, and bake in oven for 3 hours.
  8. Preheat grill.
  9. Remove ribs from foil, and discard fruit and drippings.
  10. Place on preheated grill rib bones down.
  11. Cook 5 minutes, flip over and cook another 5 minutes.
  12. Baste with barbecue sauce and let cook 5 minutes.
  13. Flip over and baste the other side with barbecue sauce.
  14. Let cook another 2-3 minutes.
  15. Remove from grill.
