Homemade Coconut Pani Squares
- 1 cup flour, all-purpose
- 1 teaspoon baking powder
- 1 large eggs
- 1 pinch salt or to taste
- 1 cup coconut pani
- 1 tablespoon sugar
- Sift the flour, add baking powder, salt and egg.
- Mix well and kneed dough until smooth, about 10 minutes, leave aside for 20 to 25 minutes.
- In wax paper roll out dough to from a large rectangle12x12 inch, thick 18 inch.
- Cut in to even 1/4 inch stripes.
- afterthat cut 1/2x 1/2 inch cubes (squares).
- Heat oil and fry cubes until golden brown.
- In a thick bottomed pan put coconut pani, sugar and bring to boil up to 100 cup degrees, using thermometer.
- Then add the pani mixture to the cubes and mix well.
- Pour the mixture greased cookie sheet.
- press firmly mixture until compact, about one inch in height.
- Allow to cool about one hour.
- Cut in to squares.
- Serve and enjoy.
