Miniature Cupcakes
- 1 (8 oz.) pkg. cream cheese
- 1 egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1 (12 oz.) pkg. semi-sweet chocolate chips
- 1 1/2 c. flour
- 1 c. sugar
- 1/4 c. cocoa
- 1 tsp. soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. oil
- 1 tsp. vanilla
- chocolate shot or nuts (optional)
- Combine softened cream cheese, egg, sugar and salt; mix well. Blend in chocolate chips; set aside.
- Sift together flour, sugar, cocoa, soda and salt.
- Stir in water, oil and vanilla.
- Line miniature cupcake pans with paper liners.
- Fill each cup 1/3 full with cocoa mixture; top with 1 teaspoon cheese mixture.
- Sprinkle with ground nuts or chocolate shot, if desired.
- Bake at 350u0b0 for 20 minutes.
