Tex-Mex Dip
- 3 medium avocados
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. sour cream
- 1/2 c. mayonnaise
- 1 pkg. taco seasoning mix
- 2 (10 1/2 oz.) cans jalapeno bean dip
- 1 large bunch green onions with tops, chopped
- 3 medium tomatoes, chopped
- 2 (3 1/2 oz.) cans pitted ripe olives, chopped
- 8 oz. shredded sharp Cheddar cheese
- Tostidos or Doritos
- Peel, pit and mash avocados in medium bowl with lemon juice, salt and pepper.
- In another bowl, combine sour cream, mayonnaise and taco seasoning.
- To assemble, spread bean dip on a large shallow platter.
- Top with seasoned avocado mix.
- Layer with sour cream mixture.
- Sprinkle with onion, tomatoes and olives.
- Cover with cheese.
- Serve chilled or at room temperature with chips.
