Cauliflower Cheese And Potato
- 1 Whole cauliflower
- 3 large potatoes
- 1 Mature chedder, grated
- 1/2 tsp Whole grain mustard
- 1 dash Franks red hot sauce (optional)
- 1 Knob of unsalted butter
- 15 grams Plain flour
- 1/2 pints Semi skimmed milk
- 80 grams Grated cheese, I use mature chedder and Gouda
- Peel and slice the potatoes into thin discs.
- Blanch in salted boiling water and set aside.
- Cut up the cauliflower into florets, blanch for 2-3 minutes in salted boiling water.
- Place in a large casserole dish.
- Make up the cheese sauce = melt the butter, stir in the flour for 1-2 mins, gradually add the milk stirring all the time till you get a smooth sauce.
- Season with salt and pepper and simmer for about 8 minutes, stirring slowly.
- Finally, take off the heat and add the cheese and mustard, stirring untill cheese melted.
- Pour the cheese sauce over the cauliflower.
- Add a dash of Franks red hot sauce over the top if you like.
- Layer the potatoes on top and sprinkle the grated cheese all over.
- Bake in the oven for about half an hour.
