Strawberry Nut Salad
- 2 (3 oz.) pkg. strawberry gelatin
- 1 c. boiling water
- 2 (10 oz.) pkg. frozen sliced strawberries, thawed
- 1 lb. 4 oz. can crushed pineapple, drained
- 3 medium bananas, mashed
- 1 c. coarsely chopped nuts (pecans or walnuts)
- 1 pt. sour cream
- 1 head lettuce (optional)
- The day before or early in the morning you can begin.
- In a large kettle or bowl, combine gelatin with boiling water, stirring until dissolved.
- Then fold in all at once, strawberries with juice, drained pineapple, bananas and nuts.
- Turn half of strawberry mixture in 12 x 8 x 2-inch baking dish as a first layer and refrigerate until firm, about 1 1/2 hours.
- Then evenly spread sour cream.
- Gently spoon on rest of strawberry mixture and refrigerate.
- Just before serving, cut in squares and serve on lettuce leaves.
- Serves 12.
