Achiote Chicken & Rice

  1. Mix mayo and annatto paste.
  2. Add half to chicken in large bowl; toss to coat.
  3. Cook chicken in large deep skillet or Dutch oven on medium-high heat 5 min.
  4. or until evenly browned, turning occasionally.
  5. Remove chicken from skillet; discard drippings.
  6. Cover chicken to keep warm.
  7. Add rice, onions, peppers, garlic and remaining mayo mixture to skillet; cook on medium-low heat 3 min., stirring constantly.
  8. Add water and bouillon; stir.
  9. Top with chicken.
  10. Bring to boil; cover.
  11. Simmer on low heat 22 to 25 min.
  12. or until chicken is done (165 degrees F) and liquid is absorbed.
  13. Top with olives and cilantro.
