Banana Tropicale
- 2 lbs meat, cut in pieces
- 1 12 cups panko breadcrumbs (or other breadcrumb or coating)
- 2 tablespoons butter
- 12 cup brown sugar
- 13 cup orange juice
- 14 cup rum
- 1 tablespoon cornstarch
- 4 bananas, small and cut in half
- Preheat oven to 400F.
- Coat the mead with the mix, spiced as you like.
- Arrange in a single layer in and baking dish.
- In a medium skillet, melt the butter add sugar, stirring constantly until melted.
- Stir orange juice and rum into cornstarch and whisk together.
- Gradually add to sugar mixture.
- Bring mixture to a boil and reduce heat and simmer, stirring constantly until sauce is thick and clear, about 3 minutes.
- Add banans and cook until heated through, about 1 minute.
- Place meat on serving plate and pour banana sauce over it.
- Serve.
