Barley With Peppers And Potatoes Recipe
- 6 lrg Poblano peppers, sliced
- 2 med Onions, minced
- 1 Tbsp. Extra virgin olive oil, or possibly vegetable oil
- 2 1/2 lb Russet potatoes, unpeeled, cooked, cubed
- 2 c. Cooked barley
- 2 Tbsp. Finely minced cilantro leaves
- 1 tsp Dry cumin Salt & cayenne to taste
- Saute/fry peppers & onions in oil in large skillet till crisp tender, about 5 min.
- Add in potatoes;, saute/fry till browned, 5-8 min.
- Add in barley to skillet; cook over medium heat till warm through, 3-4 min.
- Stir in cilantro & cumin.
- Season to taste with salt & pepper.
- Makes 4 servings.
